Cauliflower Fried Rice

Cauliflower Fried Rice Ingredients: 1 head cauliflower ½ cup frozen peas/carrots ½ onion, chopped 2 garlic cloves 1 egg 1-2 Tbsp coconut aminos Instructions: Chop cauliflower into bite size pieces, then add pieces to a blender.   Pulse the cauliflower until it becomes a rice-type consistency.   Note – it works best to do about half of the cauliflower at a time in the blender.   Heat a non-stick skillet on the stove over medium heat.   Add a little olive oil, garlic and onion.   Saute for a few minutes.   Add the riced cauliflower and peas/carrots.   Continue to stir until heated through.   Add the coconut aminos and mix together.   Create an opening in the center of the skillet, crack the egg and scramble the egg.   Once the egg is cooked, mix with the fried rice.   You can add chicken, shrimp, beef or pork to make it a main dish or serve as is for a side dish.
