Stuffed Acorn Squash
Ingredients:
1 acorn squash
1 lb chicken sausage (I like the sweet Italian from Sprouts)
1/2 package mushrooms
2 celery stalks
1/2 onion
1 green apple
1/2 tsp ground sage
1 TBSP minced garlic
Directions:
1. Preheat oven to 400.
2. Microwave acorn squash for 1 minute. Slice in half and remove the seeds.
3. Drizzle squash with olive oil, salt & pepper.
4. Bake for 30-45 minutes in a baking dish with the skin facing up.
5. While the squash is baking, brown the chicken sausage, onions and garlic. Add in the mushrooms, celery and apple.
6. Sprinkle the stuffing with sage and add salt & pepper if you taste it and it needs some.
7. Once the squash is cooked and the inside is soft, stuff the squash with the sausage mixture and serve!
