Sausage and Brussels Sprout Skillet
Ingredients:
1 package Trader Joe's spicy Italian chicken sausage
1/2 package Brussels sprouts from Costco
1 small onion, diced
1 small carton mushrooms
1 medium sweet potato or butternut squash
Dressing:
1 TBSP spicy brown mustard
1-2 TBSP rice wine vinegar
1/2 tsp garlic powder
Directions:
1. Preheat oven to 425.
2. Chop sweet potato (or butternut squash) into small cubes. Place on parchment paper lined baking sheet. Spray lightly with olive oil, salt & pepper. Roast in oven for about 20-25 minutes, or until brown.
3. Prepare Brussels sprouts by slicing off end, then cutting into halves or fourths. Toss lightly with olive oil (I use my garlic infused olive oil), salt & pepper. Place Brussels sprouts in grill basket on the grill over medium - medium high heat. Stir the sprouts every 5-7 minutes and remove from the grill once they are lightly charred.
4. While you are grilling the Brussels sprouts, you can also grill the sausage links.
5. In a skillet, add a little olive oil, minced garlic, onion and mushrooms. Saute until the onions are translucent.
6. Once the sausages are grilled, you can slice them and add them to the skillet mixture. Add in the Brussels sprouts and sweet potatoes.
7. Mix together the dressing and drizzle the mustard dressing over your skillet.
