Banana Protein English Muffins
 
 
 
Ingredients:
2 ripe bananas, mashed
3 Tbsp coconut flour
1 egg, 2 egg whites
1 tsp baking powder
1 tsp cinnamon
 
 
 
Mash the bananas until desired consistency.  If you want banana pieces in your English muffin, do not mash completely.  Add in remaining ingredients and mix until just moistened - do not over mix.  Spray a medium ramekin with cooking spray.  Spoon in one ice cream scoop size of the mix.  Microwave on high for 3 minutes 30 seconds.  Remove from microwave and take out of the ramekin to cool.  Repeat the process for the remaining mixture.  Recipe makes 3-4 English muffins, depending on the size of your ramekin and scoop. 
 
The English muffins are delicious toasted with almond butter for your breakfast!
