Thai Chicken Zoodles
Thai Chicken Zoodles
Ingredients:
1 date
1 cup water
1 garlic clove, pressed
1 Tbsp fresh ginger, grated (I use ground ginger)
1/4 cup almond butter (or sunflower butter)
Juice of 1/2 lime
4 Tbsp coconut aminos
1 tsp sesame oil
1/8 tsp salt
Red pepper flakes
Rotisserie chicken, shredded
2 medium zucchinis, spiralized
1 red, 1 orange or yellow pepper, sliced
1 onion, sliced
1 package mushrooms, sliced
Instructions:
Microwave 1 cup water for 2 minutes. Put date in boiling water and let is soak. In a small bowl, whisk together garlic, ginger, almond butter, lime juice, coconut aminos, sesame oil and salt. Remove date from water, cut out pit and remove outer skin. With a fork smash the date until it turns into a paste. Whisk the date paste with the rest of the "almond butter" sauce. Add a dash of red pepper flakes to sauce if you want some kick. In a skillet, add a little olive oil, garlic and the peppers, onions and mushrooms. Cook until softened. Add in the rotisserie chicken, zucchini noodles and Thai sauce. Heat and serve!
