Protein Bars
1 cup almond butter
1 tsp vanilla
1/2 cup unsweetened coconut flakes
1/4 cup sunflower seeds (optional)
1/4 cup non-dairy chocolate chips
1/4 cup raisins
1-1.5 cups almond flour
1 egg, 2 egg whites
3 dates, soaked in boiling water
1/8 cup flaxseed (optional)
Preheat oven to 325. Microwave 1 cup water for 2 minutes. Remove and add 3 dates to soak for about 5 minutes. Drain water, remove skin and seed from dates then mash them. Mix together the almond butter and vanilla. Add in remaining ingredients. Spray 9x9 pan and spread mixture evenly into pan. Use wax paper to press the mixture evenly in the pan. Bake 15 minutes. Let cool and enjoy. We like to keep the bars in the refrigerator.
