Shrimp Avocado "Toasts"

 
 
Shrimp Marinade:
1 lb shrimp
1 tsp chili powder
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cumin
1/4 tsp salt
1 Tbsp olive oil (I like to use Roasted Chili or Garlic olive oil)
 
Guacamole
1-2 avocados
1 medium tomato, diced
1-2 tsp garlic salt (to taste)
1/2 fresh squeezed lime juice
 
Sweet Potato Toasts
1 large sweet potato




 
Marinate shrimp using ingredients above for at least 30 minutes.  Preheat grill to medium high heat.  Use a grill pan for the shrimp and grill for approximately 3-5 minutes per side. 
 
For the guacamole, dice a medium tomato, add avocado and mash it in bowl using a spoon or fork.  Add garlic salt and fresh lime juice. 
 
Preheat oven to 425.  Remove skin from sweet potato.  Slice the sweet potato into 1/4" rounds and place on cooking sheet covered with parchment paper.  Lightly spray sweet potatoes with olive oil, salt and pepper.  Roast in oven for about 8-10 minutes, flip over and roast for another 5-8 minutes (or until lightly browned). 
 
To assemble, top sweet potato medallion with a spoonful of guacamole, then top with grilled shrimp.
