Cauliflower "Everything" Rolls

 
 

 
Ingredients:
1 head of cauliflower, riced (about 3 cups)
2 TBSP almond flour
1 TBSP coconut flour
2 eggs
1/2 tsp garlic powder
1/4 tsp sea salt
Trader Joe's "Everything" bagel seasoning
 
*If you don't have TJ's Everything seasoning, you can use:
1/2 tsp poppy seeds
1 TBSP sesame seeds
1 TBSP dried minced garlic
1 TBSP dried minced onion
1/2 tsp coarse sea salt
 
Directions:
1.  Preheat oven to 400 and line baking sheet with parchment paper
2. In a food processor or blender, pulse/grate cauliflower until rice consistency.
3. In a bowl, combine eggs, cauliflower rice, almond flour, coconut flour, garlic powder and salt.
4. In a separate bowl, combine the "everything" seasoning ingredients if you are not using the TJ's seasoning mix.
5. Use an ice cream scoop to obtain even-sized rolls.  Set on baking sheet and flatten with your hand.  Sprinkle with "everything" seasoning mixture and slightly press into the top.
6. Bake for about 30 minutes, or until golden brown.
7. Remove from baking sheet and let cool directly on a cooling rack.
 
Serve as rolls with your meal, or serve as bread with your favorite sandwich ingredients.  I love to use these rolls with my Avocado Chicken Salad or with the Sloppy Joe recipes.
